Description
Delicious almond cream puffs filled with whipped cream or pastry cream, topped with sliced almonds.

- ½ cup (120 ml) water
- ½ cup (120 ml) milk
- ½ cup (115 g) unsalted butter
- 1 tbsp sugar
- ¼ tsp salt
- 1 cup (125 g) all-purpose flour
- 4 large eggs
- ½ cup sliced almonds
- 1 tbsp powdered sugar (for dusting)
- 1 ½ cups heavy cream, chilled
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
- Add flour all at once, stirring vigorously until mixture forms a ball and pulls away from the sides.
- Remove from heat. Let cool 5 minutes.
- Beat in eggs, one at a time, until smooth and glossy.
- Spoon or pipe dough onto the baking sheet in rounds (about 2 inches wide).
- Sprinkle sliced almonds on top.
- Bake 25–30 minutes, until golden and puffed. Do not open oven early.
- Cool completely on a wire rack.
- Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. (Or prepare pastry cream if preferred.)
- Slice puffs in half horizontally.
- Pipe or spoon cream into the bottom half.
- Replace the top and dust with powdered sugar.
Notes
- Ensure the eggs are at room temperature for better incorporation.
- Do not open the oven door while baking to ensure proper puffing.
- For a richer flavor, consider using almond extract in the filling.
