Description

Delicious almond cream puffs filled with whipped cream or pastry cream, topped with sliced almonds.


Ingredients

Scale
  • ½ cup (120 ml) water
  • ½ cup (120 ml) milk
  • ½ cup (115 g) unsalted butter
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • ½ cup sliced almonds
  • 1 tbsp powdered sugar (for dusting)
  • 1 ½ cups heavy cream, chilled
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
  3. Add flour all at once, stirring vigorously until mixture forms a ball and pulls away from the sides.
  4. Remove from heat. Let cool 5 minutes.
  5. Beat in eggs, one at a time, until smooth and glossy.
  6. Spoon or pipe dough onto the baking sheet in rounds (about 2 inches wide).
  7. Sprinkle sliced almonds on top.
  8. Bake 25–30 minutes, until golden and puffed. Do not open oven early.
  9. Cool completely on a wire rack.
  10. Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. (Or prepare pastry cream if preferred.)
  11. Slice puffs in half horizontally.
  12. Pipe or spoon cream into the bottom half.
  13. Replace the top and dust with powdered sugar.

  • Ensure the eggs are at room temperature for better incorporation.
  • Do not open the oven door while baking to ensure proper puffing.
  • For a richer flavor, consider using almond extract in the filling.
