Delicious Almond Sugar Vanilla Custard Puff Pastries that are easy to make and perfect for any occasion.

- 2 sheets frozen puff pastry, thawed
- 1 egg + 1 tbsp milk (for egg wash)
- 3–4 tbsp coarse/pearl sugar
- ⅓ cup sliced almonds
- 2 cups (480 ml) whole milk
- ½ cup (100 g) granulated sugar
- ¼ cup (30 g) cornstarch
- 4 large egg yolks
- 2 tbsp (28 g) unsalted butter
- 2 tsp vanilla extract
Instructions
- Make the Vanilla Custard: In a saucepan, whisk together sugar, cornstarch, and egg yolks. Slowly whisk in milk until smooth. Cook over medium heat, stirring constantly, until thickened and bubbling. Remove from heat and stir in butter and vanilla extract. Transfer to a bowl, press plastic wrap directly on the surface, and refrigerate until fully chilled.
- Prepare the Pastries: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out thawed puff pastry slightly and cut each sheet into 6 even rectangles (12 total). Place half the rectangles on the baking sheet. Brush edges lightly with egg wash. Spoon a dollop of chilled custard in the center (leave edges clear). Top with the remaining pastry rectangles and press edges to seal with a fork.
- Add Topping: Brush tops with egg wash. Sprinkle with coarse sugar and sliced almonds.
- Bake: Bake for 15–18 minutes or until golden brown and puffed. Cool slightly before serving — custard will be hot.
