A savory twist on classic comfort food, this Bacon Cheeseburger Meatloaf combines the flavors of a cheeseburger with the heartiness of meatloaf.

- 2 lbs ground beef (80/20 works best)
- 1 cup breadcrumbs (panko or regular)
- 2 large eggs
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- ½ cup ketchup (or BBQ sauce if preferred)
- 2 cups shredded cheddar cheese
- 6–8 slices bacon, cooked until crispy and chopped
Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease.
- In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, ketchup, mustard, Worcestershire, salt, and pepper. Mix until just combined (don’t overmix or the meatloaf will be dense). Fold in 1 cup cheddar and mozzarella cheese.
- Transfer mixture into the prepared loaf pan, pressing gently into an even shape. Spread a thin layer of ketchup (or BBQ sauce) on top. Bake for 45 minutes.
- Remove meatloaf from oven. Sprinkle 2 cups cheddar cheese evenly on top. Scatter chopped bacon over cheese. Return to oven and bake an additional 10–15 minutes, until cheese is melted and bubbly, and internal temp reaches 160°F (71°C).
- Let meatloaf rest for 10 minutes before slicing. Serve with extra ketchup, BBQ sauce, or burger toppings (pickles, lettuce, tomatoes) on the side.
Notes
- For a spicier kick, add diced jalapeños to the meat mixture.
- Ensure the internal temperature reaches 160°F (71°C) for safe consumption.
