Description
Bacon-Wrapped Onion Bombs are a delicious and flavorful dish that combines the savory taste of ground beef and cheese, all wrapped in crispy bacon and baked or grilled to perfection.

- 4 large onions
- 2 lbs (900 g) ground beef
- ½ cup bread crumbs
- 1 egg
- 1 cup shredded cheddar or mozzarella cheese (optional, for stuffing)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper, to taste
- 12–16 slices bacon (about 3–4 slices per onion)
- BBQ sauce, for brushing
Instructions
- Peel onions and cut in half from top to bottom.
- Remove the inner layers, leaving about 2–3 outer layers to form a hollow shell. Set aside.
- In a large bowl, combine ground beef, bread crumbs, egg, garlic powder, onion powder, paprika, salt, and pepper. Mix until just combined—do not overmix.
- If desired, add shredded cheese into the mixture or reserve for stuffing.
- Take a portion of the meat mixture and shape it into a ball (about the size of the onion hollow). If using cheese, place some in the center and wrap the meat around it.
- Enclose the meatball between two onion halves, pressing gently to seal.
- Wrap each onion bomb with 3–4 slices of bacon, securing with toothpicks if needed. Brush lightly with BBQ sauce.
- For grilling, preheat grill to medium heat. Cook over indirect heat for 40–50 minutes, turning occasionally, until bacon is crisp and meat is cooked through (internal temp 160°F / 71°C). Brush with more BBQ sauce during the last 10 minutes.
- For oven cooking, preheat oven to 375°F (190°C). Place onion bombs on a foil-lined baking sheet with a rack. Bake for 40–50 minutes, basting with BBQ sauce in the final 10 minutes.
- Let rest for a few minutes before serving. Serve with extra BBQ sauce for dipping.
