Delightful Bakery-Style Coconut Buns filled with sweetened shredded coconut and topped with a sprinkle of coconut.
Ingredients

- 1 cup (240 ml) warm milk
- ¼ cup (50 g) sugar
- 2¼ tsp instant yeast (1 packet)
- 1 large egg
- 3 cups (360 g) all-purpose flour
- ¼ cup (56 g) unsalted butter, softened
- ½ tsp salt
- 1 cup (80 g) sweetened shredded coconut (for filling)
- ¼ cup (50 g) sugar (for filling)
- 2 tbsp unsalted butter, softened (for filling)
- 1–2 tbsp milk (to moisten, if needed)
- 2 tbsp sweetened shredded coconut (for topping)
- 1 egg (for egg wash)
Instructions
- In a large mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add egg, flour, butter, and salt. Mix until a dough forms.
- Knead for 8–10 minutes (by hand or mixer) until smooth and elastic.
- Place in a greased bowl, cover, and let rise for 1–1½ hours or until doubled in size.
- Mix shredded coconut, sugar, and butter in a small bowl. Add milk as needed until mixture holds together.
- Punch down risen dough and divide into 8–10 equal pieces.
- Flatten each piece, place about 1 tablespoon of filling in the center, and pinch edges to seal.
- Place buns seam side down in a greased or parchment-lined baking dish.
- Cover and let buns rise for 30–45 minutes until puffy.
- Preheat oven to 350°F (175°C).
- Brush buns with beaten egg, sprinkle with shredded coconut.
- Bake 18–22 minutes, or until golden brown.
- Enjoy warm, plain, or with a bit of sweetened condensed milk drizzled on top.
Notes
- Ensure the milk is warm, not hot, to activate the yeast.
- Adjust the amount of milk in the filling based on desired consistency.
- For a richer flavor, use coconut milk instead of regular milk.
