Ingredients

  • 1 cup (240 ml) warm milk
  • ¼ cup (50 g) sugar
  • 2¼ tsp instant yeast (1 packet)
  • 1 large egg
  • 3 cups (360 g) all-purpose flour
  • ¼ cup (56 g) unsalted butter, softened
  • ½ tsp salt
  • 1 cup (80 g) sweetened shredded coconut (for filling)
  • ¼ cup (50 g) sugar (for filling)
  • 2 tbsp unsalted butter, softened (for filling)
  • 12 tbsp milk (to moisten, if needed)
  • 2 tbsp sweetened shredded coconut (for topping)
  • 1 egg (for egg wash)

Instructions

  1. In a large mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add egg, flour, butter, and salt. Mix until a dough forms.
  3. Knead for 8–10 minutes (by hand or mixer) until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise for 1–1½ hours or until doubled in size.
  5. Mix shredded coconut, sugar, and butter in a small bowl. Add milk as needed until mixture holds together.
  6. Punch down risen dough and divide into 8–10 equal pieces.
  7. Flatten each piece, place about 1 tablespoon of filling in the center, and pinch edges to seal.
  8. Place buns seam side down in a greased or parchment-lined baking dish.
  9. Cover and let buns rise for 30–45 minutes until puffy.
  10. Preheat oven to 350°F (175°C).
  11. Brush buns with beaten egg, sprinkle with shredded coconut.
  12. Bake 18–22 minutes, or until golden brown.
  13. Enjoy warm, plain, or with a bit of sweetened condensed milk drizzled on top.
