Description

BBQ Bacon Cheeseburger Stuffed Peppers are a delicious and hearty dish that combines the flavors of a classic cheeseburger with the healthy twist of stuffed bell peppers.


Ingredients

  • 4 large bell peppers (red, yellow, or mixed)
  • 1 lb (450 g) ground beef (or ground turkey)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (optional, for added bulk)
  • ½ cup BBQ sauce (plus extra for drizzling)
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • 1½ cups shredded cheddar or Colby Jack cheese
  • 6 slices cooked bacon, chopped
  • 2 tbsp fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the peppers and remove seeds/membranes. Place peppers upright in a baking dish.
  3. In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
  4. Add garlic, Worcestershire, smoked paprika, salt, and pepper. Cook 1 more minute.
  5. Stir in BBQ sauce and cooked rice (if using). Let simmer 2–3 minutes.
  6. Mix in 1 cup shredded cheese.
  7. Spoon the beef mixture evenly into each pepper. Top with remaining cheese.
  8. Cover with foil and bake for 25 minutes. Uncover, bake another 10 minutes until cheese is melted and bubbly.
  9. Sprinkle crispy bacon on top of each stuffed pepper. Drizzle with extra BBQ sauce. Garnish with parsley or green onions.

Notes

  • Feel free to customize the filling with your favorite burger toppings.
  • For a spicier kick, add jalapeños or hot sauce to the filling.
  • These can be made ahead of time and stored in the refrigerator before baking.
