BBQ Bacon Cheeseburger Stuffed Peppers are a delicious and hearty dish that combines the flavors of a classic cheeseburger with the healthy twist of stuffed bell peppers.

- 4 large bell peppers (red, yellow, or mixed)
- 1 lb (450 g) ground beef (or ground turkey)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup cooked rice (optional, for added bulk)
- ½ cup BBQ sauce (plus extra for drizzling)
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt & pepper, to taste
- 1½ cups shredded cheddar or Colby Jack cheese
- 6 slices cooked bacon, chopped
- 2 tbsp fresh parsley or green onions, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the peppers and remove seeds/membranes. Place peppers upright in a baking dish.
- In a skillet, cook ground beef and onion over medium heat until beef is browned. Drain excess fat.
- Add garlic, Worcestershire, smoked paprika, salt, and pepper. Cook 1 more minute.
- Stir in BBQ sauce and cooked rice (if using). Let simmer 2–3 minutes.
- Mix in 1 cup shredded cheese.
- Spoon the beef mixture evenly into each pepper. Top with remaining cheese.
- Cover with foil and bake for 25 minutes. Uncover, bake another 10 minutes until cheese is melted and bubbly.
- Sprinkle crispy bacon on top of each stuffed pepper. Drizzle with extra BBQ sauce. Garnish with parsley or green onions.
Notes
- Feel free to customize the filling with your favorite burger toppings.
- For a spicier kick, add jalapeños or hot sauce to the filling.
- These can be made ahead of time and stored in the refrigerator before baking.
