BBQ Brisket “Redneck” Egg Rolls are a crunchy delight filled with BBQ-flavored brisket and coleslaw, perfect for a tasty appetizer or snack.

- 1½ cups shredded cooked beef brisket (BBQ-flavored)
- 1 cup coleslaw mix (shredded cabbage & carrots)
- ¼ cup BBQ sauce, plus more for dipping
- 2 tbsp sliced green onions
- 10–12 egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine shredded brisket, coleslaw mix, BBQ sauce, and green onions. Mix until well coated and evenly combined.
- Lay an egg roll wrapper flat, with one corner pointing toward you. Spoon 2–3 tablespoons of filling into the center. Fold the bottom corner over the filling, then fold in both sides, and roll tightly. Use a dab of water on the top corner to seal. Repeat with remaining wrappers and filling.
- Heat 2–3 inches of oil in a deep skillet or fryer to 350°F (175°C). Fry egg rolls in batches for 3–4 minutes or until golden brown and crispy. Drain on paper towels.
- Serve hot with extra BBQ sauce for dipping.

- Ensure the oil is hot enough before frying to achieve a crispy texture.
