Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 cup whole milk, room temperature
  • ½ cup rainbow sprinkles (for folding into batter)
  • 1 ½ cups (3 sticks) unsalted butter, softened (for buttercream)
  • 5 cups powdered sugar
  • ¼ cup heavy cream (more if needed for consistency)
  • 2 tsp vanilla extract (for buttercream)
  • Pink gel food coloring (optional)
  • Rainbow nonpareil sprinkles (for sides & topping)
  • Extra frosting for swirls
  • Piping bag with star tip

Instructions

  1. Preheat oven to 175°C (350°F). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until fluffy (about 3 minutes).
  4. Beat in eggs one at a time, then add vanilla.
  5. Alternate adding dry ingredients and milk, mixing just until combined.
  6. Fold in rainbow sprinkles gently.
  7. Divide batter evenly among pans.
  8. Bake for 25–30 minutes, until a toothpick comes out clean. Let cool completely.
  9. Beat butter until creamy for the buttercream.
  10. Add powdered sugar gradually, mixing until smooth.
  11. Add heavy cream and vanilla, beat until fluffy.
  12. Tint with pink food coloring if desired.
  13. Place one cake layer on a stand, spread buttercream on top.
  14. Add second and third layers, spreading frosting between each.
  15. Frost the entire cake with a thin crumb coat, chill for 20 minutes.
  16. Add a final smooth layer of buttercream.
  17. Press rainbow sprinkles onto the sides of the cake.
  18. Pipe large frosting swirls on top.
  19. Sprinkle extra nonpareils over the swirls.
