- 2 cups (250 g) all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- ½ cup (115 g) cold unsalted butter, cubed
- ¾ cup (180 ml) cold buttermilk
- 12 oz (340 g) fresh chorizo sausage, casing removed
- 2 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 3 cups (720 ml) whole milk, warmed
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 220°C (425°F).
- In a large bowl, whisk flour, baking powder, baking soda, and salt.
- Cut in cold butter with a pastry cutter or your hands until the mixture looks like coarse crumbs.
- Stir in buttermilk until just combined (do not overmix).
- Turn dough onto a floured surface, gently pat into a 1-inch thick rectangle, and fold once or twice.
- Cut out biscuits with a round cutter and place on a parchment-lined baking sheet.
- Bake 12–15 minutes, until golden brown.
- In a large skillet over medium heat, cook chorizo until browned and fully cooked, breaking it into crumbles (5–6 minutes).
- Remove cooked chorizo, leaving about 2 tbsp fat in the skillet. Add butter if needed.
- Stir in flour and cook 1–2 minutes to form a roux.
- Slowly whisk in warm milk until smooth and thickened, 5–7 minutes.
- Stir in paprika, garlic powder, salt, and pepper.
- Return cooked chorizo to skillet and mix into gravy.
- Split warm biscuits and ladle chorizo gravy generously on top.
- Garnish with chopped parsley and black pepper.
- Serve with scrambled eggs or mashed potatoes for a full Southern-style breakfast.

- For best results, use cold ingredients when making the biscuits.
- Feel free to adjust the spices in the gravy to your taste.
