Biscuits with Chorizo Gravy is a comforting Southern dish featuring flaky biscuits topped with a rich and savory chorizo gravy.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • ½ cup (115 g) cold unsalted butter, cubed
  • ¾ cup (180 ml) cold buttermilk
  • 12 oz (340 g) fresh chorizo sausage, casing removed
  • 2 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups (720 ml) whole milk, warmed
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 220°C (425°F).
  2. In a large bowl, whisk flour, baking powder, baking soda, and salt.
  3. Cut in cold butter with a pastry cutter or your hands until the mixture looks like coarse crumbs.
  4. Stir in buttermilk until just combined (do not overmix).
  5. Turn dough onto a floured surface, gently pat into a 1-inch thick rectangle, and fold once or twice.
  6. Cut out biscuits with a round cutter and place on a parchment-lined baking sheet.
  7. Bake 12–15 minutes, until golden brown.
  8. In a large skillet over medium heat, cook chorizo until browned and fully cooked, breaking it into crumbles (5–6 minutes).
  9. Remove cooked chorizo, leaving about 2 tbsp fat in the skillet. Add butter if needed.
  10. Stir in flour and cook 1–2 minutes to form a roux.
  11. Slowly whisk in warm milk until smooth and thickened, 5–7 minutes.
  12. Stir in paprika, garlic powder, salt, and pepper.
  13. Return cooked chorizo to skillet and mix into gravy.
  14. Split warm biscuits and ladle chorizo gravy generously on top.
  15. Garnish with chopped parsley and black pepper.
  16. Serve with scrambled eggs or mashed potatoes for a full Southern-style breakfast.
