Description

This indulgent dessert brings together the richness of chocolate sponge, the freshness of whipped cream, and the tart sweetness of cherries. Perfect for holidays, celebrations, or any day that needs a little decadence.


Ingredients

  • 4 large eggs, room temperature
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (60 ml) vegetable oil
  • 1 tsp vanilla extract
  • ¾ cup (90 g) all-purpose flour
  • ¼ cup (25 g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk
  • 1 ½ cups (225 g) fresh or canned cherries, pitted
  • 2 tbsp cherry syrup (from jar or homemade)
  • 1 tbsp sugar
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1 ½ cups (360 ml) heavy whipping cream, chilled
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract
  • 100 g dark chocolate (for ganache, optional)
  • 80 ml heavy cream (for ganache, optional)
  • Fresh cherries (for decoration)
  • Chocolate shavings (for decoration)

Instructions

  1. Preheat oven to 180°C (350°F). Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and sugar for 4–5 minutes until thick and pale.
  3. Add oil, vanilla, and milk; mix gently.
  4. Sift together flour, cocoa, baking powder, and salt, then fold into the wet mixture.
  5. Spread evenly in the pan and bake for 10–12 minutes, or until springy to the touch.
  6. While warm, turn the cake out onto a clean towel dusted with cocoa powder. Remove parchment and roll gently with the towel. Let cool completely.
  7. In a saucepan, combine cherries, syrup, and sugar. Bring to a simmer.
  8. Add cornstarch slurry, stir until thickened (about 2 minutes). Let cool completely before using.
  9. Beat cream, sugar, and vanilla until soft peaks form. Keep chilled.
  10. Unroll the cooled sponge gently. Spread a layer of whipped cream, followed by cherry filling.
  11. Carefully roll the cake back up (use parchment or plastic wrap for support). Wrap and refrigerate for at least 1 hour.
  12. For ganache: heat cream, pour over chopped chocolate, and stir until smooth. Spread over the roll and refrigerate for 15 minutes.
  13. Top with whipped cream rosettes, fresh cherries, and chocolate shavings.
