- 4 slices rustic bread (sourdough or artisan loaf works best)
- 6 oz Brie cheese, sliced
- 1/2 cup fresh blackberries
- 2 tbsp blackberry jam (optional, for extra sweetness)
- 2 tbsp butter, softened
- 1/4 cup balsamic vinegar
- 1 tbsp honey or brown sugar
Instructions
- Make the balsamic reduction: In a small saucepan, heat balsamic vinegar and honey over medium heat. Simmer until reduced by half and syrupy (about 5 minutes). Remove from heat and let cool slightly.
- Assemble the sandwich: Butter one side of each bread slice. On the unbuttered side, layer Brie slices, fresh blackberries, and a drizzle of balsamic reduction. Spread blackberry jam on the opposite slice if using. Close sandwich with buttered sides facing out.
- Grill: Heat skillet or grill pan over medium heat. Cook sandwich 2–3 minutes per side until bread is golden and cheese is melty. Press down gently with a spatula or panini press for a gooey melt.
- Serve: Slice in half, drizzle extra balsamic glaze, and garnish with fresh basil or mint.
