- 2 ½ cups (310 g) all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup (225 g) unsalted butter, softened
- 2 cups (400 g) granulated sugar
- 4 large eggs, room temperature
- 1 cup (240 ml) buttermilk, room temperature
- 1 tbsp white vinegar
- 2 tsp vanilla extract
- 2–3 tsp royal blue gel food coloring (plus a drop of violet for depth)
- 16 oz (450 g) cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 5 cups (600 g) powdered sugar
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
- In a bowl, whisk flour, cocoa, baking soda, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well. Stir in vanilla.
- Mix in buttermilk, vinegar, and food coloring.
- Gradually add dry ingredients, mixing until smooth.
- Divide batter evenly among the three pans.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely before frosting.
- Beat cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar, mixing until fluffy.
- Stir in vanilla.
- Place first cake layer on a serving plate, spread with frosting.
- Repeat with remaining layers.
- Frost the top and sides smoothly, then pipe rosettes on top if desired.
- Sprinkle with blue cake crumbs for decoration.

- Ensure all ingredients are at room temperature for best results.
- Adjust the amount of food coloring to achieve desired shade of blue.
