Description

Ingredients

  • 2 ½ cups (310 g) all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (225 g) unsalted butter, softened
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) buttermilk, room temperature
  • 1 tbsp white vinegar
  • 2 tsp vanilla extract
  • 23 tsp royal blue gel food coloring (plus a drop of violet for depth)
  • 16 oz (450 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 5 cups (600 g) powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk flour, cocoa, baking soda, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well. Stir in vanilla.
  5. Mix in buttermilk, vinegar, and food coloring.
  6. Gradually add dry ingredients, mixing until smooth.
  7. Divide batter evenly among the three pans.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool completely before frosting.
  10. Beat cream cheese and butter until smooth and creamy.
  11. Gradually add powdered sugar, mixing until fluffy.
  12. Stir in vanilla.
  13. Place first cake layer on a serving plate, spread with frosting.
  14. Repeat with remaining layers.
  15. Frost the top and sides smoothly, then pipe rosettes on top if desired.
  16. Sprinkle with blue cake crumbs for decoration.
