- 1 cup cottage cheese
- ½ cup cream cheese, softened
- ½ cup granulated sugar (or honey for a lighter option)
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup milk
- 2 tbsp melted butter
- 1 ½ cups fresh blueberries (reserve a few for topping)
Instructions
- Preheat oven to 350°F (175°C).
- Grease or line an 8×8-inch baking dish with parchment paper.
- In a bowl, whisk together cottage cheese, cream cheese, sugar, eggs, and vanilla until smooth.
- Stir in flour, baking powder, and salt.
- Add milk and melted butter, mixing until a smooth batter forms.
- Gently fold in most of the blueberries, reserving some for the top.
- Pour batter into prepared dish.
- Sprinkle remaining blueberries on top.
- Bake for 35–40 minutes, until golden on top and set in the middle. A toothpick should come out mostly clean.
- Let cool for 10 minutes before slicing. Serve warm as a breakfast bake or chilled as a snack/dessert.
Notes
- For a lighter option, substitute granulated sugar with honey.
- Can be served warm or chilled.
- Store leftovers in the refrigerator for up to 3 days.
