A delicious and easy-to-make breakfast bake featuring cottage cheese and fresh blueberries, perfect for a nutritious start to your day.


Ingredients

  • 1 cup cottage cheese
  • ½ cup cream cheese, softened
  • ½ cup granulated sugar (or honey for a lighter option)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • 2 tbsp melted butter
  • 1 ½ cups fresh blueberries (reserve a few for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease or line an 8×8-inch baking dish with parchment paper.
  3. In a bowl, whisk together cottage cheese, cream cheese, sugar, eggs, and vanilla until smooth.
  4. Stir in flour, baking powder, and salt.
  5. Add milk and melted butter, mixing until a smooth batter forms.
  6. Gently fold in most of the blueberries, reserving some for the top.
  7. Pour batter into prepared dish.
  8. Sprinkle remaining blueberries on top.
  9. Bake for 35–40 minutes, until golden on top and set in the middle. A toothpick should come out mostly clean.
  10. Let cool for 10 minutes before slicing. Serve warm as a breakfast bake or chilled as a snack/dessert.

Notes

  • For a lighter option, substitute granulated sugar with honey.
  • Can be served warm or chilled.
  • Store leftovers in the refrigerator for up to 3 days.
