A delicious and easy-to-make Blueberry Cream Cheese French Toast Bake, perfect for breakfast or brunch.

- 1 loaf French bread or brioche, cut into 1-inch cubes (about 10–12 cups)
- 8 oz cream cheese, cut into small cubes
- 1 cup fresh or frozen blueberries
- 8 large eggs
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/3 cup granulated sugar
- 1/4 cup maple syrup (plus more for serving)
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 cup all-purpose flour (for streusel topping)
- 1/2 cup brown sugar (for streusel topping)
- 1 tsp ground cinnamon (for streusel topping)
- 1/4 cup unsalted butter, cold and cubed (for streusel topping)
Instructions
- Assemble the Bake: Grease a 9×13-inch baking dish. Layer half of the bread cubes in the dish. Evenly scatter the cream cheese cubes and blueberries over the bread. Top with the remaining bread cubes.
- Make the Custard: In a large bowl, whisk together eggs, milk, cream, sugar, maple syrup, vanilla, and cinnamon. Pour the mixture evenly over the bread layers, pressing down lightly so the bread absorbs the liquid. Cover with plastic wrap and refrigerate for at least 3 hours or overnight for best results.
- Streusel Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter until crumbly. Sprinkle over the casserole just before baking.
- Bake: Preheat oven to 350°F (175°C). Bake uncovered for 45–55 minutes, until golden brown and set in the center. If the top browns too quickly, cover loosely with foil.
- Serve: Let cool for 5–10 minutes. Drizzle with maple syrup and serve warm.
Notes
- For best results, refrigerate overnight.
- Feel free to substitute other berries if desired.
- Can be made gluten-free by using gluten-free bread.
