A delicious and easy-to-make appetizer featuring creamy ricotta cheese, sweet blueberries, and a tangy balsamic glaze, all served on crispy crostini.

- 1 baguette, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- Pinch of salt
- 1 cup ricotta cheese (whole milk ricotta = creamiest)
- 1–2 tsp honey
- Pinch salt
- Optional: 1 tsp lemon zest
- 1 1/2 cups fresh or frozen blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- Pinch cinnamon (optional but amazing)
- Balsamic glaze (store-bought or homemade)
- Fresh basil leaves (small leaves or chiffonade)
Instructions
- Preheat oven to 400°F (200°C).
- Arrange baguette slices on a baking sheet.
- Brush lightly with olive oil and sprinkle salt.
- Bake for 6–8 minutes, until golden and crisp.
- In a bowl, mix ricotta, honey, salt, and lemon zest (if using). Beat until light and fluffy (30–60 seconds).
- Heat blueberries, honey, and lemon juice in a small skillet over medium heat. Cook for 3–5 minutes, stirring, until berries soften and juices thicken slightly. Remove from heat and let cool for 2 minutes.
- Spread each toasted crostini with a generous layer of ricotta.
- Spoon warm blueberries on top.
- Drizzle with balsamic glaze.
- Garnish with basil and serve immediately while crostini is still crisp.
Notes
- For a sweeter topping, adjust the amount of honey or maple syrup to taste.
- Feel free to add more lemon zest for extra flavor.
- Store any leftover crostini components separately to maintain crispness.
