Description

A delicious and easy-to-make appetizer featuring creamy ricotta cheese, sweet blueberries, and a tangy balsamic glaze, all served on crispy crostini.


Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • Pinch of salt
  • 1 cup ricotta cheese (whole milk ricotta = creamiest)
  • 12 tsp honey
  • Pinch salt
  • Optional: 1 tsp lemon zest
  • 1 1/2 cups fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • Pinch cinnamon (optional but amazing)
  • Balsamic glaze (store-bought or homemade)
  • Fresh basil leaves (small leaves or chiffonade)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange baguette slices on a baking sheet.
  3. Brush lightly with olive oil and sprinkle salt.
  4. Bake for 6–8 minutes, until golden and crisp.
  5. In a bowl, mix ricotta, honey, salt, and lemon zest (if using). Beat until light and fluffy (30–60 seconds).
  6. Heat blueberries, honey, and lemon juice in a small skillet over medium heat. Cook for 3–5 minutes, stirring, until berries soften and juices thicken slightly. Remove from heat and let cool for 2 minutes.
  7. Spread each toasted crostini with a generous layer of ricotta.
  8. Spoon warm blueberries on top.
  9. Drizzle with balsamic glaze.
  10. Garnish with basil and serve immediately while crostini is still crisp.

  • For a sweeter topping, adjust the amount of honey or maple syrup to taste.
  • Feel free to add more lemon zest for extra flavor.
