- 1½ cups (180 g) powdered sugar
- 2 tbsp heavy cream
- 200 g white chocolate, chopped
- 100 ml heavy cream
- 1 tbsp butter
- Blue buttercream (made from vanilla frosting tinted with blue gel color)
- Fresh blueberries
- Chocolate truffles or Ferrero-style chocolates
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper.
- In a bowl, beat eggs and sugar together for about 5 minutes until thick, pale, and fluffy.
- Mix in oil, vanilla, buttermilk, and vinegar.
- Sift in flour, baking powder, and salt. Fold gently until smooth.
- Add blue food coloring and (optional) blueberry jam, adjusting to achieve your desired shade.
- Spread the batter evenly into the prepared pan and bake for 10–12 minutes, until just set and springy.
- While warm, flip the cake onto a clean towel dusted with powdered sugar.
- Carefully peel off the parchment paper and roll the cake with the towel inside (short side). Let it cool completely.
- Beat cream cheese and butter until smooth and creamy.
- Add vanilla and powdered sugar, mixing until fluffy.
- Add heavy cream to loosen the texture if needed.
- Unroll the cooled sponge carefully.
- Spread an even layer of the cream cheese filling.
- Roll it back tightly (without the towel) and wrap in plastic wrap.
- Chill for 1 hour to set.
- Heat heavy cream until steaming, pour over white chocolate, and let sit for 1 minute.
- Stir until smooth, then add butter for gloss.
- Pour over the chilled cake and smooth the top.
- Pipe blue buttercream swirls on top.
- Add fresh blueberries and chocolate truffles.
- Dust lightly with powdered sugar for a frosty finish.
