Description

  • ¾ cup granulated sugar
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp buttermilk
  • 1 cup all-purpose flour (sifted)
  • 1 tsp baking powder
  • ⅛ tsp salt
  • 1 tsp white vinegar
  • Blue food coloring (gel type preferred)
  • 1 tbsp blueberry jam (optional, for extra flavor)
  • 1 cup (225 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 1 tsp vanilla extract
  • 1½ cups (180 g) powdered sugar
  • 2 tbsp heavy cream
  • 200 g white chocolate, chopped
  • 100 ml heavy cream
  • 1 tbsp butter
  • Blue buttercream (made from vanilla frosting tinted with blue gel color)
  • Fresh blueberries
  • Chocolate truffles or Ferrero-style chocolates
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch (25×38 cm) jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and sugar together for about 5 minutes until thick, pale, and fluffy.
  3. Mix in oil, vanilla, buttermilk, and vinegar.
  4. Sift in flour, baking powder, and salt. Fold gently until smooth.
  5. Add blue food coloring and (optional) blueberry jam, adjusting to achieve your desired shade.
  6. Spread the batter evenly into the prepared pan and bake for 10–12 minutes, until just set and springy.
  7. While warm, flip the cake onto a clean towel dusted with powdered sugar.
  8. Carefully peel off the parchment paper and roll the cake with the towel inside (short side). Let it cool completely.
  9. Beat cream cheese and butter until smooth and creamy.
  10. Add vanilla and powdered sugar, mixing until fluffy.
  11. Add heavy cream to loosen the texture if needed.
  12. Unroll the cooled sponge carefully.
  13. Spread an even layer of the cream cheese filling.
  14. Roll it back tightly (without the towel) and wrap in plastic wrap.
  15. Chill for 1 hour to set.
  16. Heat heavy cream until steaming, pour over white chocolate, and let sit for 1 minute.
  17. Stir until smooth, then add butter for gloss.
  18. Pour over the chilled cake and smooth the top.
  19. Pipe blue buttercream swirls on top.
  20. Add fresh blueberries and chocolate truffles.
  21. Dust lightly with powdered sugar for a frosty finish.
