Description

Boston Cream Pie Cookie Bites are a delightful treat that combines the flavors of a classic Boston cream pie in a bite-sized cookie form.


Ingredients

  • 115 g (½ cup) unsalted butter, softened
  • 100 g (½ cup) granulated sugar
  • 50 g (¼ cup) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 160 g (1⅓ cups) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • Pinch of salt
  • 240 ml (1 cup) whole milk
  • 3 large egg yolks
  • 70 g (⅓ cup) granulated sugar
  • 15 g (2 tbsp) cornstarch
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 120 g (4 oz) dark chocolate, chopped
  • 120 ml (½ cup) heavy cream
  • 1 tsp butter (for shine)

Instructions

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment.
  2. Cream butter and sugars until light and fluffy. Add egg and vanilla, mixing well.
  3. Whisk flour, baking powder, baking soda, and salt. Add gradually to wet mix.
  4. Scoop small dough balls (about 1 tbsp each) onto the sheet.
  5. Bake 8–10 minutes until lightly golden. Cool completely.
  6. Heat milk in a saucepan until just simmering.
  7. In a bowl, whisk egg yolks, sugar, and cornstarch until pale and thick.
  8. Slowly stream hot milk into yolk mixture while whisking.
  9. Return to saucepan, cook over medium heat, whisking until thickened (about 2–3 min).
  10. Remove from heat, stir in butter and vanilla.
  11. Cover with plastic wrap touching the surface and chill until firm.
  12. Heat cream until just simmering, then pour over chocolate.
  13. Let sit 1 minute, then stir until smooth. Stir in butter.
  14. Let cool slightly until it thickens enough to spoon but is still glossy.
  15. Pipe or spoon pastry cream onto each cooled cookie.
  16. Top with a generous spoonful of ganache (let it drip slightly).
  17. Optionally sprinkle with flaky sea salt for contrast.
  18. Chill for 20 minutes before serving so the ganache sets slightly.
