- 8 oz (225 g) semisweet chocolate, chopped
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 2 tbsp cocoa powder
- 1/2 tsp baking powder
- Pinch of salt
- Vanilla ice cream (small scoops)
- 1 cup semisweet chocolate chips (for drizzle)
- 2 tbsp heavy cream
- Maraschino cherries (with stems)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- Melt butter and chocolate together in a bowl over simmering water (or microwave in 20-sec bursts). Stir until smooth.
- Whisk in sugar, eggs, and vanilla.
- In another bowl, combine flour, cocoa, baking powder, and salt.
- Fold dry mixture into chocolate mixture until combined.
- Scoop dough into large rounds on baking sheet. Flatten slightly.
- Bake 10–12 minutes until set but soft in the center. Cool completely.
- Melt chocolate chips with heavy cream until smooth. Let cool slightly (so it’s thick but pourable).
- Place a scoop of vanilla ice cream on each cooled brownie cookie.
- Drizzle with melted chocolate and top with a maraschino cherry.

- Ensure the brownie cookies are completely cooled before adding ice cream and toppings.
- For a richer flavor, use dark chocolate instead of semisweet chocolate.
