Description

A delicious and creamy Butterscotch Cream Pie topped with whipped cream, perfect for dessert lovers.


Ingredients

  • 1 ½ cups (150 g) graham cracker crumbs (or digestive biscuits, crushed)
  • ¼ cup (50 g) sugar
  • 6 tbsp (85 g) unsalted butter, melted
  • 1 cup (200 g) brown sugar (light or dark)
  • ¼ cup (60 g) unsalted butter
  • ¼ cup (30 g) cornstarch
  • ¼ tsp salt
  • 2 ½ cups (600 ml) whole milk
  • 3 large egg yolks, lightly beaten
  • 1 tsp vanilla extract
  • 1 cup (240 ml) heavy whipping cream, chilled
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Butterscotch drizzle or caramel sauce (optional)
  • Crumbled toffee bits or shaved chocolate (optional)

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a pie dish, covering the bottom and sides.
  3. Bake 8–10 minutes, then let cool completely.
  4. In a medium saucepan, melt butter and brown sugar over medium heat until bubbly and fragrant.
  5. Whisk in cornstarch and salt.
  6. Slowly add milk while whisking continuously to prevent lumps.
  7. Temper egg yolks by whisking in a little hot mixture, then return to saucepan.
  8. Cook until thickened (pudding-like consistency). Remove from heat, stir in vanilla.
  9. Pour filling into cooled crust. Smooth the top, cover with plastic wrap (touching surface), and refrigerate 4–6 hours until set.
  10. Whip cream, powdered sugar, and vanilla until soft peaks form.
  11. Spread or pipe over chilled pie.
  12. Drizzle with butterscotch or caramel sauce. Sprinkle with toffee bits or chocolate shavings.
  13. Slice and enjoy chilled!

  • Can be made a day in advance for convenience.
  • For a richer flavor, use dark brown sugar in the filling.
