- ½ cup powdered sugar
- ½ tsp vanilla extract
- 1 cup white chocolate, melted and cooled slightly
- 1 ½ cups graham cracker crumbs (or digestive biscuit crumbs)
- 2 tbsp butter, melted
- 2 tbsp brown sugar
- ½ cup caramel sauce (homemade or store-bought)
Instructions
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in melted white chocolate until creamy. Cover and chill mixture for 30–45 minutes until firm enough to scoop.
- In a skillet, melt butter and stir in graham cracker crumbs and brown sugar. Toast 3–4 minutes until golden and crunchy. Let cool.
- Scoop chilled cheesecake mixture with a spoon or small cookie scoop. Roll into smooth balls. Roll each ball in graham crunch coating until well covered.
- Drizzle generously with caramel sauce.
