- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- Cheesecake Filling
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- Caramelized Bananas
- 3 ripe bananas, sliced into thick rounds
- ½ cup brown sugar
- 3 tbsp unsalted butter
- 2 tbsp heavy cream
- Pinch of salt
- 1 tsp rum or vanilla extract (optional)
- Caramel Sauce Drizzle
- ½ cup caramel sauce (store-bought or homemade)
Instructions
- Make the Crust: Preheat oven to 325°F (165°C). Mix graham crumbs, sugar, and melted butter until sandy. Press firmly into bottom of springform pan. Bake 8 minutes, then cool.
- Prepare Cheesecake: Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and flour; mix well. Add eggs one at a time, mixing gently until combined. Pour batter over cooled crust. Bake 55–60 minutes, until center is just set. Turn off oven, crack door, and let cheesecake rest 1 hour. Chill at least 4 hours or overnight.
- Caramelize Bananas: In skillet, melt butter and brown sugar over medium heat. Add bananas, cook 2–3 minutes until golden and coated. Stir in cream, salt, and rum/vanilla. Simmer until thickened.
- Assemble & Serve: Spoon caramelized bananas over chilled cheesecake. Drizzle with caramel sauce. Slice and enjoy!

- For best results, chill the cheesecake overnight.
- Feel free to use homemade caramel sauce for added flavor.
