Ingredients

  • ¾ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 3 large eggs
  • ½ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • 2 tsp vanilla extract
  • 2 cups finely grated carrots (about 23 medium carrots)
  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar
  • Extra grated carrots (for garnish)
  • Powdered sugar dusting (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, lightly greasing it.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, granulated sugar, brown sugar, and vanilla until thick and pale (about 3 minutes).
  4. Gently fold in grated carrots, then stir in dry ingredients until just combined.
  5. Spread batter evenly into the prepared pan and bake for 10–12 minutes, or until the cake springs back when touched.
  6. While the cake is still warm, carefully invert it onto a clean kitchen towel dusted with powdered sugar and peel off the parchment paper.
  7. Starting from the short side, gently roll up the cake with the towel inside and let it cool completely, seam side down.
  8. Beat cream cheese and butter until smooth, then add vanilla and powdered sugar, mixing until creamy and spreadable.
  9. Unroll the cooled cake carefully and spread cream cheese filling evenly over the surface.
  10. Re-roll the cake tightly (without the towel this time), wrap in plastic wrap, and refrigerate for at least 1 hour before slicing.
  11. Spread a thin layer of extra frosting on top if desired, and sprinkle with grated carrots or dust lightly with powdered sugar before serving.
