- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp ground cinnamon

- 3 large eggs
- ½ cup granulated sugar
- ¼ cup brown sugar (packed)
- 2 tsp vanilla extract
- 2 cups finely grated carrots (about 2–3 medium carrots)
- 8 oz cream cheese, softened
- 4 tbsp unsalted butter, softened
- 1 tsp vanilla extract
- 1 ½ cups powdered sugar
- Extra grated carrots (for garnish)
- Powdered sugar dusting (for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, lightly greasing it.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs, granulated sugar, brown sugar, and vanilla until thick and pale (about 3 minutes).
- Gently fold in grated carrots, then stir in dry ingredients until just combined.
- Spread batter evenly into the prepared pan and bake for 10–12 minutes, or until the cake springs back when touched.
- While the cake is still warm, carefully invert it onto a clean kitchen towel dusted with powdered sugar and peel off the parchment paper.
- Starting from the short side, gently roll up the cake with the towel inside and let it cool completely, seam side down.
- Beat cream cheese and butter until smooth, then add vanilla and powdered sugar, mixing until creamy and spreadable.
- Unroll the cooled cake carefully and spread cream cheese filling evenly over the surface.
- Re-roll the cake tightly (without the towel this time), wrap in plastic wrap, and refrigerate for at least 1 hour before slicing.
- Spread a thin layer of extra frosting on top if desired, and sprinkle with grated carrots or dust lightly with powdered sugar before serving.
Notes
- Roll the cake while warm to prevent cracking.
- Chill before slicing for neat swirls.
- You can add chopped walnuts or crushed pineapple to the batter for extra texture.
