Ingredients

  • 3 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp active dry yeast
  • 1 tsp salt
  • 1 cup warm milk (110°F / 43°C)
  • 2 tbsp butter, melted
  • 1 large egg
  • 23 tsp activated charcoal powder (for color)
  • Sesame seeds (for topping)
  • 1 ½ lbs ground beef (80/20 blend for juiciness)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt & pepper, to taste
  • Cheddar cheese slices (or your favorite melty cheese)
  • Fresh lettuce leaves
  • Tomato slices
  • Red onion slices (optional)
  • Spicy mayo or chipotle sauce

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Add flour, salt, butter, egg, and activated charcoal powder. Mix and knead until smooth (about 8 minutes).
  3. Cover and let rise until doubled, about 1 hour.
  4. Shape into buns, place on a baking sheet, cover, and rise another 30 minutes.
  5. Brush with egg wash, sprinkle sesame seeds, and bake at 375°F (190°C) for 15–18 minutes. Let cool.
  6. Mix ground beef with garlic powder, onion powder, paprika, salt, and pepper.
  7. Form into patties.
  8. Grill or pan-sear until desired doneness, adding cheese slices in the last 1–2 minutes to melt.
  9. Slice charcoal buns in half.
  10. Spread spicy mayo or chipotle sauce on the bottom bun.
  11. Layer lettuce, tomato slices, and a cheesy beef patty.
  12. Add optional onion slices, then top with the black bun crown.
