- 1 tbsp sugar
- 1 tbsp active dry yeast
- 1 tsp salt
- 1 cup warm milk (110°F / 43°C)
- 2 tbsp butter, melted
- 1 large egg
- 2–3 tsp activated charcoal powder (for color)
- Sesame seeds (for topping)
- 1 ½ lbs ground beef (80/20 blend for juiciness)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt & pepper, to taste
- Cheddar cheese slices (or your favorite melty cheese)
- Fresh lettuce leaves
- Tomato slices
- Red onion slices (optional)
- Spicy mayo or chipotle sauce
Instructions
- In a bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Add flour, salt, butter, egg, and activated charcoal powder. Mix and knead until smooth (about 8 minutes).
- Cover and let rise until doubled, about 1 hour.
- Shape into buns, place on a baking sheet, cover, and rise another 30 minutes.
- Brush with egg wash, sprinkle sesame seeds, and bake at 375°F (190°C) for 15–18 minutes. Let cool.
- Mix ground beef with garlic powder, onion powder, paprika, salt, and pepper.
- Form into patties.
- Grill or pan-sear until desired doneness, adding cheese slices in the last 1–2 minutes to melt.
- Slice charcoal buns in half.
- Spread spicy mayo or chipotle sauce on the bottom bun.
- Layer lettuce, tomato slices, and a cheesy beef patty.
- Add optional onion slices, then top with the black bun crown.
