Ingredients

  • 1 lb (450 g) large fresh strawberries
  • 8 oz (225 g) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup graham cracker crumbs (optional, for topping)

Instructions

  1. Wash and dry strawberries.
  2. Cut off the stems, then hollow out the centers using a small knife or melon baller.
  3. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth and fluffy.
  4. Transfer mixture into a piping bag (or zip bag with the tip snipped off).
  5. Pipe cheesecake filling into each hollowed strawberry until nicely filled.
  6. If desired, dip the tops in graham cracker crumbs for a ‘cheesecake crust’ effect.
  7. Chill in the fridge for at least 30 minutes before serving.
  8. You can also freeze them for a frosty summer treat!
