- 1 lb (450 g) large fresh strawberries
- 8 oz (225 g) cream cheese, softened
- ¼ cup powdered sugar
- 1 tsp vanilla extract
- ½ cup graham cracker crumbs (optional, for topping)
Instructions
- Wash and dry strawberries.
- Cut off the stems, then hollow out the centers using a small knife or melon baller.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth and fluffy.
- Transfer mixture into a piping bag (or zip bag with the tip snipped off).
- Pipe cheesecake filling into each hollowed strawberry until nicely filled.
- If desired, dip the tops in graham cracker crumbs for a ‘cheesecake crust’ effect.
- Chill in the fridge for at least 30 minutes before serving.
- You can also freeze them for a frosty summer treat!
