Description

Cheesy Crispy Chicken Rolls are a delightful dish featuring tender chicken breasts stuffed with gooey cheese and optionally ham, all coated in a crispy breadcrumb layer.


Ingredients

  • 2 large chicken breasts (butterflied & pounded thin)
  • 68 cheese sticks (mozzarella, cheddar, or your favorite melting cheese)
  • 4 slices deli ham or turkey (optional, for extra flavor)
  • Salt & pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 2 cups panko breadcrumbs
  • ½ cup grated Parmesan cheese (optional, for extra crunch)
  • Oil for deep frying (vegetable or canola)

Instructions

  1. Prepare the Chicken: Slice chicken breasts lengthwise to make thin cutlets. Place each cutlet between parchment and pound lightly to even thickness. Season with salt, pepper, garlic powder, and paprika.
  2. Roll & Stuff: Place a slice of ham (if using) on each chicken piece. Add a cheese stick in the center. Roll tightly and secure with toothpicks.
  3. Bread the Rolls: Dredge chicken rolls in flour. Dip into beaten eggs. Coat in panko breadcrumbs (mixed with Parmesan if using). For extra crunch, repeat egg + breadcrumb step once more.
  4. Fry or Bake: Fry: Heat oil to 175°C (350°F). Fry rolls for 5–6 minutes, turning until golden brown. Drain on paper towels. Bake (lighter option): Place rolls on a baking tray, spray with oil, and bake at 200°C (400°F) for 20–25 minutes, until crispy and cooked through.
  5. Serve: Slice into halves to reveal the cheesy center. Serve hot with marinara, ranch, or garlic aioli for dipping.
