- 1 cup crushed Doritos (nacho cheese flavor)
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup milk
- 1 medium onion, finely chopped
- 1 jalapeño, finely diced (optional for heat)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 cup sour cream (or Greek yogurt)
- ½ cup cream cheese, softened
- ½ tsp garlic powder
- 1 ½ cups shredded cheddar cheese
- 1–2 jalapeños, diced (optional, for kick)
- 1 cup crushed Doritos (for the crunchy topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix ground beef, crushed Doritos, shredded cheddar, eggs, milk, onion, jalapeño, and seasonings.
- Spread mixture evenly into a greased 9×13-inch baking dish.
- Bake uncovered for 25–30 minutes, until cooked through. Drain excess grease if needed.
- In a bowl, mix sour cream, cream cheese, and garlic powder until smooth.
- Spread evenly over the baked meatloaf layer.
- Sprinkle shredded cheddar over the creamy layer.
- Top with diced jalapeños.
- Finish with a layer of crushed Doritos.
- Return casserole to the oven for 15 minutes, until cheese is melted and bubbly.
- Let rest for 5 minutes before slicing into squares.
Notes
- Feel free to adjust the level of spiciness by adding more or fewer jalapeños.
- This dish can be made ahead of time and reheated before serving.
- For a lighter version, consider using lean ground beef and reduced-fat cheese.
