Ingredients

  • 1 cup crushed Doritos (nacho cheese flavor)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • ½ cup milk
  • 1 medium onion, finely chopped
  • 1 jalapeño, finely diced (optional for heat)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup sour cream (or Greek yogurt)
  • ½ cup cream cheese, softened
  • ½ tsp garlic powder
  • 1 ½ cups shredded cheddar cheese
  • 12 jalapeños, diced (optional, for kick)
  • 1 cup crushed Doritos (for the crunchy topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix ground beef, crushed Doritos, shredded cheddar, eggs, milk, onion, jalapeño, and seasonings.
  3. Spread mixture evenly into a greased 9×13-inch baking dish.
  4. Bake uncovered for 25–30 minutes, until cooked through. Drain excess grease if needed.
  5. In a bowl, mix sour cream, cream cheese, and garlic powder until smooth.
  6. Spread evenly over the baked meatloaf layer.
  7. Sprinkle shredded cheddar over the creamy layer.
  8. Top with diced jalapeños.
  9. Finish with a layer of crushed Doritos.
  10. Return casserole to the oven for 15 minutes, until cheese is melted and bubbly.
  11. Let rest for 5 minutes before slicing into squares.
