Description
A hearty casserole combining juicy seasoned meatloaf and creamy mac and cheese, all baked together and drizzled with rich BBQ sauce.
Ingredients
- Ground beef – 1 lb (450 g)
- Elbow macaroni – 3 cups (cooked al dente)
- Shredded cheddar cheese – 3 cups
- Milk – 2 cups
- Eggs – 2 large
- Onion – ½ cup, finely diced
- Breadcrumbs – ½ cup
- Garlic powder – 1 tsp
- Paprika – ½ tsp
- Salt & black pepper – to taste
- Unsalted butter – 3 tbsp
- All-purpose flour – 3 tbsp
- BBQ sauce – ½ cup (plus extra for topping)
- Dried parsley – for garnish
Instructions
- Mix ground beef, onion, breadcrumbs, 1 egg, garlic powder, paprika, salt, and pepper.
- Press mixture evenly into the bottom of a greased 9×13 baking dish.
- In a saucepan, melt butter and whisk in flour to form a roux.
- Slowly add milk, whisking until thickened.
- Stir in 2 cups shredded cheddar until smooth and creamy.
- Toss with cooked macaroni.
- Spread mac and cheese over the meatloaf base.
- Top with remaining cheddar cheese.
- Bake at 375°F (190°C) for 40–45 minutes, until bubbly and golden on top.
- Drizzle with BBQ sauce and sprinkle with parsley before serving.
Notes
- Ensure the macaroni is cooked al dente to prevent it from becoming mushy during baking.
- Feel free to add your favorite spices to the meatloaf mixture for extra flavor.
- Let the casserole sit for a few minutes before serving to allow it to set.
