Description

A hearty casserole combining juicy seasoned meatloaf and creamy mac and cheese, all baked together and drizzled with rich BBQ sauce.


Ingredients

  • Ground beef – 1 lb (450 g)
  • Elbow macaroni – 3 cups (cooked al dente)
  • Shredded cheddar cheese – 3 cups
  • Milk – 2 cups
  • Eggs – 2 large
  • Onion – ½ cup, finely diced
  • Breadcrumbs – ½ cup
  • Garlic powder – 1 tsp
  • Paprika – ½ tsp
  • Salt & black pepper – to taste
  • Unsalted butter – 3 tbsp
  • All-purpose flour – 3 tbsp
  • BBQ sauce – ½ cup (plus extra for topping)
  • Dried parsley – for garnish

Instructions

  1. Mix ground beef, onion, breadcrumbs, 1 egg, garlic powder, paprika, salt, and pepper.
  2. Press mixture evenly into the bottom of a greased 9×13 baking dish.
  3. In a saucepan, melt butter and whisk in flour to form a roux.
  4. Slowly add milk, whisking until thickened.
  5. Stir in 2 cups shredded cheddar until smooth and creamy.
  6. Toss with cooked macaroni.
  7. Spread mac and cheese over the meatloaf base.
  8. Top with remaining cheddar cheese.
  9. Bake at 375°F (190°C) for 40–45 minutes, until bubbly and golden on top.
  10. Drizzle with BBQ sauce and sprinkle with parsley before serving.

  • Ensure the macaroni is cooked al dente to prevent it from becoming mushy during baking.
  • Feel free to add your favorite spices to the meatloaf mixture for extra flavor.
