Description

A delicious homemade version of Taco Bell’s Cheesy Quesarito, featuring seasoned taco meat, cilantro lime rice, and a creamy chipotle sauce, all wrapped in a cheesy tortilla.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 packet taco seasoning (or homemade mix)
  • ½ cup water
  • 1 cup white rice, cooked
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp butter
  • Pinch of salt
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • 1 tsp lime juice
  • 1 tsp chipotle chili powder (or chipotle in adobo, finely minced)
  • ½ tsp garlic powder
  • Pinch of salt
  • 1 cup nacho cheese sauce (warm)
  • ½ cup shredded mozzarella (optional for extra gooeyness)

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat. Add taco seasoning + water, stir, and simmer 5 minutes until saucy.
  2. Mix cooked rice with butter, lime juice, cilantro, and salt. Keep warm.
  3. Heat a skillet, butter one side of a tortilla. Place butter side down, sprinkle with ½ cup cheddar cheese, then top with another tortilla. Cook until golden and cheese melts (like a quesadilla). Repeat to make 4 cheese tortilla bases.
  4. Lay down a cheese tortilla. Spread 2 tbsp chipotle sauce. Add a spoonful of cilantro lime rice. Top with taco meat, drizzle nacho cheese, and a sprinkle of mozzarella. Roll tightly like a burrito.
  5. Place seam side down in a hot skillet or griddle. Toast each side 1–2 minutes until golden brown and sealed.

Notes

  • For a spicier version, add more chipotle chili powder.
  • Feel free to customize with your favorite toppings like guacamole or jalapeños.
  • Make sure to keep the quesadillas warm while assembling the Quesaritos.
