Description

- 1 ½ lbs (700 g) potatoes, peeled and cut into cubes
- 12 oz (350 g) smoked sausage or kielbasa, sliced into rounds
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp dried oregano
- Salt & black pepper, to taste
- 1 ½ cups shredded mozzarella cheese (or cheddar blend)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Place cubed potatoes in a large bowl. Drizzle with olive oil and season with garlic powder, paprika, oregano, salt, and pepper. Toss to coat evenly.
- Spread potatoes on a parchment-lined baking sheet. Roast for 20–25 minutes, tossing halfway through, until golden and tender.
- Add sliced sausage to the pan with potatoes. Roast for another 10–12 minutes until sausage is browned.
- Transfer potatoes and sausage into a baking dish. Sprinkle generously with shredded mozzarella (or your favorite cheese). Return to oven for 5–7 minutes, until cheese is melted and bubbly.
- Garnish with fresh parsley. Serve hot with a side salad or crusty bread.
Notes
- Feel free to substitute the sausage with your favorite type or use a vegetarian option.
- For extra flavor, add some chopped onions or bell peppers with the potatoes.
- This dish can be made ahead of time and reheated in the oven.
