Description

A hearty and comforting dish made with golden roasted potatoes, savory sausage, and plenty of melted cheese. Perfect for weeknight dinners or cozy gatherings.


Ingredients

  • 1 ½ lbs (700 g) potatoes, peeled and cut into cubes
  • 12 oz (350 g) smoked sausage or kielbasa, sliced into rounds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Salt & black pepper, to taste
  • 1 ½ cups shredded mozzarella cheese (or cheddar blend)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cubed potatoes in a large bowl. Drizzle with olive oil and season with garlic powder, paprika, oregano, salt, and pepper. Toss to coat evenly.
  3. Spread potatoes on a parchment-lined baking sheet. Roast for 20–25 minutes, tossing halfway through, until golden and tender.
  4. Add sliced sausage to the pan with potatoes. Roast for another 10–12 minutes until sausage is browned.
  5. Transfer potatoes and sausage into a baking dish. Sprinkle generously with shredded mozzarella (or your favorite cheese). Return to oven for 5–7 minutes, until cheese is melted and bubbly.
  6. Garnish with fresh parsley. Serve hot with a side salad or crusty bread.

Notes

  • Feel free to substitute the sausage with your favorite type or use a vegetarian option.
  • For extra flavor, add some chopped onions or bell peppers with the potatoes.
  • This dish can be made ahead of time and reheated in the oven.
