Cheesy Spinach-Artichoke Bagels are a savory delight, perfect for a snack, appetizer, or lunch, featuring a creamy filling of spinach and artichokes topped with melted cheese.


Ingredients

  • 1 cup frozen spinach (thawed & squeezed dry)
  • 1 cup canned artichoke hearts (chopped)
  • 4 oz cream cheese (softened)
  • ¼ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • ½ cup mozzarella cheese (shredded)
  • ¼ cup Parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 4 bagels (plain, everything, or sesame)
  • 1 cup mozzarella cheese (shredded, for topping)
  • 1 tbsp olive oil (for brushing)
  • Fresh parsley or Italian herbs, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice bagels in half and hollow out some of the inside bread to create space for filling. Brush lightly with olive oil.
  3. In a bowl, combine cream cheese, sour cream, mayo, mozzarella, Parmesan, spinach, artichokes, garlic, salt, pepper, and red pepper flakes. Stir until smooth and creamy.
  4. Spoon spinach-artichoke filling into each bagel half. Top with extra mozzarella cheese.
  5. Place bagels on a parchment-lined baking sheet. Bake for 12–15 minutes, until cheese is bubbly and golden brown.
  6. Sprinkle with parsley or Italian herbs. Serve warm as a snack, appetizer, or lunch.
