- 1 cup frozen spinach (thawed & squeezed dry)
- 1 cup canned artichoke hearts (chopped)
- 4 oz cream cheese (softened)
- ¼ cup sour cream (or Greek yogurt)
- ¼ cup mayonnaise
- ½ cup mozzarella cheese (shredded)
- ¼ cup Parmesan cheese (grated)
- 2 cloves garlic (minced)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes (optional)
- 4 bagels (plain, everything, or sesame)
- 1 cup mozzarella cheese (shredded, for topping)
- 1 tbsp olive oil (for brushing)
- Fresh parsley or Italian herbs, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Slice bagels in half and hollow out some of the inside bread to create space for filling. Brush lightly with olive oil.
- In a bowl, combine cream cheese, sour cream, mayo, mozzarella, Parmesan, spinach, artichokes, garlic, salt, pepper, and red pepper flakes. Stir until smooth and creamy.
- Spoon spinach-artichoke filling into each bagel half. Top with extra mozzarella cheese.
- Place bagels on a parchment-lined baking sheet. Bake for 12–15 minutes, until cheese is bubbly and golden brown.
- Sprinkle with parsley or Italian herbs. Serve warm as a snack, appetizer, or lunch.
