- 2 large onions (cut into thick rings)
- 8 oz (225 g) mozzarella cheese (cut into sticks or slices)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 2 tbsp milk (for egg wash)
- 2 cups panko breadcrumbs
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Vegetable or canola oil (for frying)
- Fresh parsley (chopped, for garnish)
Instructions
- Slice onions into thick rings and separate.
- Place a smaller onion ring inside a larger one, leaving space between.
- Fill the gap with mozzarella slices/sticks, pressing gently to fit.
- Freeze stuffed rings for 20 minutes (helps hold shape while frying).
- Set up breading station: Bowl 1 with flour (seasoned with garlic powder, paprika, salt, and pepper), Bowl 2 with beaten eggs and milk, Bowl 3 with panko breadcrumbs.
- Coat each stuffed ring in flour, then dip in egg wash, then coat fully in breadcrumbs.
- For extra crunch, repeat egg + breadcrumb coating.
- Heat oil to 350°F (175°C).
- Fry onion rings 2–3 minutes per side until golden brown.
- Drain on paper towels.
- Garnish with parsley.
- Serve hot with marinara sauce, ranch, or garlic aioli for dipping.
Notes
- Freezing the stuffed rings helps maintain their shape while frying.
- For a spicier kick, add cayenne pepper to the breadcrumb mixture.
- These onion rings can be made ahead of time and frozen before frying.
