Description

Cheesy Sweet Potato Custard Bites are a delightful combination of sweet and savory flavors, featuring a creamy custard filling nestled in a sweet potato base.

Ingredients

Scale
  • 2 medium sweet potatoes (about 1 ½ cups mashed)
  • 2 tbsp unsalted butter (melted)
  • ¼ cup sugar (adjust depending on sweetness of potatoes)
  • 1 egg
  • ¼ cup milk (or cream for richness)
  • 2 tbsp all-purpose flour
  • 1 cup milk (for custard filling)
  • 2 egg yolks
  • 3 tbsp sugar (for custard filling)
  • 1 tbsp cornstarch
  • ½ tsp vanilla extract
  • ½ cup cream cheese or mascarpone (softened)
  • ½ cup shredded mozzarella or mild cheddar (for topping)
  • Honey or glaze (optional, for finishing)

Instructions

  1. Prepare the Sweet Potato Base: Bake or steam sweet potatoes until soft, then mash until smooth. Mix mashed potato with melted butter, sugar, egg, milk, and flour until creamy. Spoon mixture into greased muffin molds, pressing gently to form a cup-like base.
  2. Make the Custard: In a saucepan, whisk milk, egg yolks, sugar, and cornstarch. Cook over medium heat, whisking constantly, until thickened. Remove from heat, stir in vanilla and cream cheese until smooth.
  3. Assemble: Fill each sweet potato base with custard filling. Sprinkle lightly with shredded cheese.
  4. Bake: Bake at 350°F (175°C) for 20–25 minutes, until golden on top and set in the middle.
  5. Serve: Let cool slightly. Drizzle with honey or glaze if desired, and serve warm.

Notes

  • Adjust the sugar based on the sweetness of the sweet potatoes used.
  • For a richer flavor, use cream instead of milk in the base.
  • These bites can be served as an appetizer or a side dish.
