- ½ cup shredded mozzarella or mild cheddar (for topping)
- Honey or glaze (optional, for finishing)
Instructions
- Prepare the Sweet Potato Base: Bake or steam sweet potatoes until soft, then mash until smooth. Mix mashed potato with melted butter, sugar, egg, milk, and flour until creamy. Spoon mixture into greased muffin molds, pressing gently to form a cup-like base.
- Make the Custard: In a saucepan, whisk milk, egg yolks, sugar, and cornstarch. Cook over medium heat, whisking constantly, until thickened. Remove from heat, stir in vanilla and cream cheese until smooth.
- Assemble: Fill each sweet potato base with custard filling. Sprinkle lightly with shredded cheese.
- Bake: Bake at 350°F (175°C) for 20–25 minutes, until golden on top and set in the middle.
- Serve: Let cool slightly. Drizzle with honey or glaze if desired, and serve warm.
