Description

Cheesy Taco Lasagna Bake is a delicious dinner delight that combines the flavors of tacos and lasagna into a hearty, cheesy dish.


Ingredients

Scale
  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 cup salsa or tomato sauce
  • 1 cup canned corn kernels (drained)
  • 1 cup black beans (optional)
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • ½ cup sliced green onions
  • 1 tomato, diced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, cook ground beef with onion and garlic over medium heat until browned.
  2. Drain excess fat.
  3. Add taco seasoning, salsa, corn, and beans (if using).
  4. Simmer 5 minutes until thickened.
  5. Preheat oven to 180°C (350°F).
  6. Lightly grease a baking dish (9×9 inch).
  7. Layer as follows: Tortillas (to cover the base), half of the meat mixture, a handful of cheese, repeat layers once more, finishing with cheese on top.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake another 10 minutes, until bubbly and golden.
  10. Let rest 10 minutes before slicing.
  11. Top with dollops of sour cream, diced tomato, green onions, and fresh cilantro.

Notes

  • Feel free to customize the filling with your favorite vegetables.
  • For a spicier version, add jalapeños or hot sauce.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
