Cheesy Taco Lasagna Bake is a delicious dinner delight that combines the flavors of tacos and lasagna into a hearty, cheesy dish.

- 1 lb (450 g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (or 2 tbsp) taco seasoning
- 1 cup salsa or tomato sauce
- 1 cup canned corn kernels (drained)
- 1 cup black beans (optional)
- Salt and pepper, to taste
- 8 small flour or corn tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup sour cream
- ½ cup sliced green onions
- 1 tomato, diced
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, cook ground beef with onion and garlic over medium heat until browned.
- Drain excess fat.
- Add taco seasoning, salsa, corn, and beans (if using).
- Simmer 5 minutes until thickened.
- Preheat oven to 180°C (350°F).
- Lightly grease a baking dish (9×9 inch).
- Layer as follows: Tortillas (to cover the base), half of the meat mixture, a handful of cheese, repeat layers once more, finishing with cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10 minutes, until bubbly and golden.
- Let rest 10 minutes before slicing.
- Top with dollops of sour cream, diced tomato, green onions, and fresh cilantro.
Notes
- Feel free to customize the filling with your favorite vegetables.
- For a spicier version, add jalapeños or hot sauce.
- This dish can be made ahead of time and stored in the refrigerator before baking.
