Description

Cherry-Chip Muffins with Pink Cherry Glaze are delightful treats that combine the sweetness of cherries and chocolate in a moist muffin, topped with a vibrant pink glaze.


Ingredients

  • 1¾ cups (220 g) all-purpose flour
  • ¾ cup (150 g) sugar
  • ½ cup (120 ml) milk
  • ½ cup (113 g) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup maraschino cherries, chopped (reserve juice for glaze)
  • ¾ cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, whisk sugar, melted butter, eggs, vanilla, and milk until smooth.
  4. Gradually fold in dry ingredients until just combined. Do not overmix.
  5. Gently fold in chopped cherries and chocolate chips.
  6. Divide batter evenly among muffin cups, filling each about ¾ full.
  7. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. In a small bowl, whisk powdered sugar with cherry juice until smooth and pourable.
  10. Drizzle or spoon glaze over cooled muffins. Garnish with extra chocolate chips or cherry pieces if desired.

Notes

  • For a more vibrant glaze, add a drop of pink food coloring.
  • Ensure not to overmix the batter to keep the muffins light and fluffy.
