- ½ cup (113 g) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp vanilla extract

- ¼ tsp baking soda
- ½ tsp salt
- 1 cup maraschino cherries, chopped (reserve juice for glaze)
- ¾ cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate large bowl, whisk sugar, melted butter, eggs, vanilla, and milk until smooth.
- Gradually fold in dry ingredients until just combined. Do not overmix.
- Gently fold in chopped cherries and chocolate chips.
- Divide batter evenly among muffin cups, filling each about ¾ full.
- Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a small bowl, whisk powdered sugar with cherry juice until smooth and pourable.
- Drizzle or spoon glaze over cooled muffins. Garnish with extra chocolate chips or cherry pieces if desired.
Notes
- For a more vibrant glaze, add a drop of pink food coloring.
- Ensure not to overmix the batter to keep the muffins light and fluffy.
