Chewy Coconut Bars are a delicious treat with a graham cracker crust, creamy layer, and a coconut topping that will satisfy your sweet tooth.

- 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 can (14 oz) sweetened condensed milk
- 8 oz cream cheese (softened)
- 1 tsp vanilla extract
- 2 cups sweetened shredded coconut
- ½ cup chopped toasted nuts (optional, pecans or almonds)
- ¼ cup brown sugar
- 2 tbsp unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and sugar until well combined. Press mixture firmly into the bottom of the prepared pan.
- Bake for 8 minutes, then let cool slightly.
- In a bowl, beat cream cheese until smooth. Add sweetened condensed milk and vanilla; mix until creamy. Spread evenly over the cooled crust.
- In another bowl, combine shredded coconut, brown sugar, melted butter, and nuts (if using). Sprinkle evenly over the cream cheese mixture.
- Bake for 25–30 minutes, until golden brown on top and set in the center. Cool completely before slicing into bars. Garnish with extra coconut flakes if desired.
Notes
- For a gluten-free version, use gluten-free graham crackers or biscuits.
- Feel free to experiment with different nuts or omit them entirely.
- Store leftovers in an airtight container in the refrigerator.
