Description

Chewy Coconut Bars are a delicious treat with a graham cracker crust, creamy layer, and a coconut topping that will satisfy your sweet tooth.


Ingredients

  • 1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 2 cups sweetened shredded coconut
  • ½ cup chopped toasted nuts (optional, pecans or almonds)
  • ¼ cup brown sugar
  • 2 tbsp unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar until well combined. Press mixture firmly into the bottom of the prepared pan.
  3. Bake for 8 minutes, then let cool slightly.
  4. In a bowl, beat cream cheese until smooth. Add sweetened condensed milk and vanilla; mix until creamy. Spread evenly over the cooled crust.
  5. In another bowl, combine shredded coconut, brown sugar, melted butter, and nuts (if using). Sprinkle evenly over the cream cheese mixture.
  6. Bake for 25–30 minutes, until golden brown on top and set in the center. Cool completely before slicing into bars. Garnish with extra coconut flakes if desired.

Notes

  • For a gluten-free version, use gluten-free graham crackers or biscuits.
  • Feel free to experiment with different nuts or omit them entirely.
  • Store leftovers in an airtight container in the refrigerator.
