- Cheesecake Filling:
- 6 oz (170 g) cream cheese, softened
- ¼ cup (30 g) powdered sugar
- ½ tsp vanilla extract
- 1 tsp cornstarch
- Chocolate Cookie Dough:
- 1 cup (225 g) unsalted butter, softened
- 1 cup (200 g) brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (80 g) cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1½ cups (270 g) semi-sweet or dark chocolate chunks
Instructions
- In a small bowl, beat cream cheese until smooth.
- Add powdered sugar, vanilla, and cornstarch; mix until creamy.
- Cover and freeze for 30–45 minutes to firm up for easier stuffing.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs and vanilla.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Fold in chocolate chunks.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about 2 tbsp of cookie dough, flatten slightly in your hand.
- Place 1 tsp of the chilled cheesecake filling in the center.
- Wrap dough around filling and roll into a ball.
- Repeat with remaining dough and filling.
- Place cookies on prepared sheet, spaced 2 inches apart.
- Bake for 10–12 minutes until edges are set but centers look slightly soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Enjoy warm for a gooey center or at room temperature for a fudgy bite.
- Store in an airtight container in the fridge for up to 5 days.

- For a richer flavor, use dark chocolate chunks.
- Ensure the cream cheese is at room temperature for easier mixing.
