Description

Delicious Chocolate Cheesecake Cookies with a creamy cheesecake filling and rich chocolate cookie dough.


Ingredients

  • Cheesecake Filling:
  • 6 oz (170 g) cream cheese, softened
  • ¼ cup (30 g) powdered sugar
  • ½ tsp vanilla extract
  • 1 tsp cornstarch
  • Chocolate Cookie Dough:
  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 cup (80 g) cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ cups (270 g) semi-sweet or dark chocolate chunks

Instructions

  1. In a small bowl, beat cream cheese until smooth.
  2. Add powdered sugar, vanilla, and cornstarch; mix until creamy.
  3. Cover and freeze for 30–45 minutes to firm up for easier stuffing.
  4. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  5. Beat in eggs and vanilla.
  6. In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
  7. Gradually mix dry ingredients into wet ingredients until just combined.
  8. Fold in chocolate chunks.
  9. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  10. Scoop about 2 tbsp of cookie dough, flatten slightly in your hand.
  11. Place 1 tsp of the chilled cheesecake filling in the center.
  12. Wrap dough around filling and roll into a ball.
  13. Repeat with remaining dough and filling.
  14. Place cookies on prepared sheet, spaced 2 inches apart.
  15. Bake for 10–12 minutes until edges are set but centers look slightly soft.
  16. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  17. Enjoy warm for a gooey center or at room temperature for a fudgy bite.
  18. Store in an airtight container in the fridge for up to 5 days.
