A delicious and visually appealing Chocolate Chip Cookie Layer Cake that combines cookie layers with delightful frosting and decorations.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, melted
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup chocolate frosting
  • 1 cup strawberry frosting (or whipped strawberry cream)
  • 1 ½ cups whipped cream
  • Mini chocolate chips
  • Chocolate chip cookies, halved
  • Pink and white candy melts or M&Ms

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, baking soda, and salt in a bowl.
  3. In another bowl, whisk melted butter, brown sugar, white sugar, eggs, and vanilla.
  4. Combine wet and dry ingredients; fold in chocolate chips.
  5. Spread the dough evenly into three 8-inch cake pans lined with parchment.
  6. Bake for 15–18 minutes, or until golden and set.
  7. Cool completely before assembling.
  8. Place the first cookie layer on a serving plate. Spread chocolate frosting evenly.
  9. Add the second cookie layer and spread with strawberry frosting.
  10. Place the final cookie layer on top and frost with whipped cream.
  11. Top with mini chocolate chips and halved cookies.
  12. Add pink and white candies for a colorful finish.
