- 2 tbsp lemon juice
- 200 g (1 cup) granulated sugar
- 2 tbsp honey or corn syrup
- 1 tbsp orange zest (optional, for extra flavor)
- 3 tbsp powdered gelatin (or agar-agar for a vegetarian option)
- 60 ml (¼ cup) cold water (for blooming gelatin)
- 250 g (9 oz) dark chocolate (70% cocoa recommended)
- 1 tbsp coconut oil or cocoa butter (for shine)
- Optional Garnish: Flaky sea salt or candied orange peel
Instructions
- In a small bowl, sprinkle gelatin over 60 ml cold water. Let it bloom for 5 minutes.
- In a saucepan, combine orange juice, lemon juice, sugar, honey, and zest.
- Heat gently until sugar dissolves, then bring to a light simmer.
- Remove from heat and stir in bloomed gelatin until fully dissolved.
- Pour mixture into a parchment-lined 20×20 cm (8×8 in) pan or silicone mold.
- Refrigerate for 4 hours or until firm.
- Cut into squares or use a small cutter for neat shapes.
- Melt chocolate and coconut oil together in a heatproof bowl over simmering water (or microwave in intervals).
- Using a fork, dip each jelly square into melted chocolate, letting excess drip off.
- Place on parchment paper and let set.
- Before chocolate fully sets, sprinkle lightly with flaky sea salt or top with a small strip of candied orange peel.
- Store in an airtight container in the fridge for up to 2 weeks.

- For a vegetarian option, use agar-agar instead of gelatin.
- Ensure the chocolate is melted gently to avoid burning.
