Ingredients

  • 4 large eggs (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 1/4 cups heavy cream (chilled)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • Food coloring gels (red, orange, yellow, green, blue, purple)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (warm)
  • Rainbow sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a bowl, beat eggs and sugar with an electric mixer until thick and pale (5 minutes).
  3. Sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  4. Add vanilla extract. Spread batter evenly in the prepared pan.
  5. Bake for 10–12 minutes, until springy to the touch.
  6. While warm, turn the cake onto a clean kitchen towel dusted with powdered sugar.
  7. Peel off parchment paper. Roll cake up in the towel (starting from the short side). Let cool completely.
  8. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  9. Divide into 6 bowls and tint each with a different food color.
  10. Spread dollops of each colored cream in rows across the unrolled cake. Use a spatula to lightly swirl colors for a rainbow effect.
  11. Gently re-roll the cake with filling inside. Wrap in plastic wrap and refrigerate 1 hour to set.
  12. Make ganache by pouring warm cream over chocolate chips, whisking until smooth.
  13. Spread ganache over the roll. Top with rainbow sprinkles.
