A rich and decadent Classic Chocolate Layer Cake with Fudge Frosting that is perfect for any celebration.

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup buttermilk (or milk + 1 tsp vinegar)
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot coffee (or hot water for milder flavor)
- 2 cups whole milk
- 1/2 cup sugar
- 3 tbsp cornstarch
- 3 large egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
- 1/2 cup butter
- 1 cup heavy cream
- 2 cups semisweet chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
- In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.
- Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
- Stir in hot coffee until batter is thin and glossy.
- Divide into pans and bake 30–35 minutes, until a toothpick comes out clean. Cool completely.
- Heat milk until steaming.
- In a bowl, whisk egg yolks, sugar, and cornstarch.
- Slowly whisk in hot milk, then return mixture to saucepan.
- Cook until thick and creamy.
- Remove from heat, stir in butter and vanilla. Cover and chill until firm.
- Heat cream and butter until hot (not boiling).
- Pour over chocolate chips. Let sit 1 minute, then stir until glossy.
- Stir in vanilla. Let cool until thickened but spreadable.
- Place one cake layer on a plate. Spread cream filling evenly.
- Top with second cake layer.
- Frost entire cake with fudge frosting.

- Ensure all ingredients are at room temperature for best results.
- For a stronger coffee flavor, use hot coffee instead of water.
- Chill the cream filling for at least 2 hours before assembling the cake.
