Description

A rich and decadent Classic Chocolate Layer Cake with Fudge Frosting that is perfect for any celebration.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk (or milk + 1 tsp vinegar)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water for milder flavor)
  • 2 cups whole milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1/2 cup butter
  • 1 cup heavy cream
  • 2 cups semisweet chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Mix until smooth.
  4. Stir in hot coffee until batter is thin and glossy.
  5. Divide into pans and bake 30–35 minutes, until a toothpick comes out clean. Cool completely.
  6. Heat milk until steaming.
  7. In a bowl, whisk egg yolks, sugar, and cornstarch.
  8. Slowly whisk in hot milk, then return mixture to saucepan.
  9. Cook until thick and creamy.
  10. Remove from heat, stir in butter and vanilla. Cover and chill until firm.
  11. Heat cream and butter until hot (not boiling).
  12. Pour over chocolate chips. Let sit 1 minute, then stir until glossy.
  13. Stir in vanilla. Let cool until thickened but spreadable.
  14. Place one cake layer on a plate. Spread cream filling evenly.
  15. Top with second cake layer.
  16. Frost entire cake with fudge frosting.
