Ingredients

  • 2 cups graham cracker crumbs (or crushed digestive biscuits)
  • ½ cup unsalted butter (melted)
  • ¼ cup cocoa powder
  • ¼ cup granulated sugar
  • ½ cup finely chopped nuts or shredded coconut (optional)
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 3 Tbsp cornstarch
  • 2 large egg yolks
  • 2 Tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 ½ cups semi-sweet chocolate chips (or chopped chocolate)
  • ¾ cup heavy cream
  • 1 Tbsp butter (for shine)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. Mix graham crumbs, cocoa powder, sugar, and melted butter until combined. Press firmly into the bottom of the pan. Bake for 10 minutes. Let cool.
  3. In a saucepan, whisk together sugar, cornstarch, and egg yolks. Gradually whisk in milk until smooth. Cook over medium heat, whisking constantly, until thickened (about 6–8 minutes). Remove from heat and stir in butter and vanilla. Spread custard over cooled crust. Chill in refrigerator until set (about 1–2 hours).
  4. Heat cream until just steaming. Pour over chocolate chips and let sit 2 minutes. Stir until smooth and glossy. Mix in butter. Pour ganache over chilled custard layer. Spread evenly. Refrigerate until firm (at least 2 hours, or overnight).
  5. Cut into neat squares using a sharp knife. Garnish with chocolate shavings or a sprinkle of sea salt.
