Description

A delightful and creamy strawberry cheesecake poke cake that combines the flavors of cheesecake and fresh strawberries in a moist cake.


Ingredients

  • 1 box vanilla or white cake mix (plus ingredients listed on box: eggs, oil, water)
  • 1 tsp vanilla extract (optional boost for boxed mix)
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) sweetened condensed milk
  • 1 cup (240 ml) cold milk
  • 1 box (3.4 oz / 96 g) instant cheesecake pudding mix
  • 1 tsp vanilla extract
  • 2 cups (300 g) fresh strawberries, sliced
  • ½ cup (100 g) granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thicker glaze)
  • 1½ cups (360 ml) heavy whipping cream
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Whole strawberries for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Prepare the cake according to box instructions or your own recipe. Pour into a greased 9×13-inch (23×33 cm) baking dish and bake until a toothpick comes out clean. Let it cool for 10 minutes, then use the handle of a wooden spoon to poke holes all over the cake (about 1 inch apart).
  2. In a bowl, beat softened cream cheese until smooth. Add sweetened condensed milk and mix until creamy. In another bowl, whisk together cold milk and pudding mix for 2 minutes until thick. Combine both mixtures and stir in vanilla extract. Pour the creamy filling evenly over the warm cake, letting it seep into the holes. Chill for at least 1 hour.
  3. In a saucepan, combine sliced strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries soften and release their juices (4–6 minutes). If you want a thicker texture, stir in the cornstarch slurry and cook until glossy. Let the mixture cool completely, then spread evenly over the chilled cake.
  4. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread or pipe over the top of the strawberry layer. Garnish with whole or halved strawberries.
