Description

A spooky and fun Halloween treat — bright red jello cups topped with edible ‘eyeballs’ that look straight out of a haunted lab! Perfect for parties and easy to make ahead.


Ingredients

Scale
  • 2 boxes (3 oz each) cherry or strawberry Jell-O
  • 2 cups boiling water
  • 2 cups cold water
  • 8 plastic cups (clear, 5 oz size)
  • 8 gummy eyeballs (or peeled lychees filled with blueberries or candy eyeballs for edible version)

Instructions

  1. In a large bowl, pour the gelatin powder. Add 2 cups of boiling water, whisking until completely dissolved (about 2 minutes).
  2. Stir in 2 cups of cold water and mix well.
  3. Arrange your plastic cups on a tray or baking sheet. Pour the liquid Jell-O mixture evenly into each cup (fill about ¾ full).
  4. Transfer to the refrigerator and chill for about 2 hours, or until the gelatin is halfway set (slightly thickened but not firm).
  5. Gently press one gummy eyeball (or lychee/blueberry combo) into the center of each cup. Make sure it sits partly submerged for that creepy “floating” effect.
  6. Return cups to the fridge and chill for another 2–3 hours, until completely firm.
  7. Keep refrigerated until serving. Serve straight from the cups for easy cleanup.

Notes

  • For a more realistic effect, use different types of edible eyeballs.
  • These can be made a day in advance for convenience.
  • Experiment with different flavors of Jell-O for variety.
