- 8 chicken drumsticks
- 2 cups buttermilk
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 ½ cups all-purpose flour
- ½ cup cornstarch
- 1 tsp smoked paprika
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
- 1 tsp salt
- ½ tsp black pepper
- Vegetable oil (enough for deep frying)
Instructions
- In a large bowl, combine buttermilk, salt, pepper, paprika, and garlic powder. Add drumsticks, cover, and marinate at least 2 hours (overnight for best flavor).
- In another bowl, whisk flour, cornstarch, and spices. Remove chicken from marinade (shake off excess), dredge in flour mixture, dip back into buttermilk, then coat again in flour for extra crunch.
- Heat oil in a deep skillet or fryer to 350°F (175°C). Fry drumsticks in batches for 12–14 minutes, turning occasionally, until golden brown and internal temp reaches 165°F (74°C). Drain on paper towels or a wire rack.
- Sprinkle with fresh rosemary or parsley (optional). Enjoy hot with dipping sauces or sides.

- For best results, marinate the chicken overnight.
- Adjust the cayenne pepper according to your spice preference.
