  • 1 tablespoon honey (optional, for extra richness)
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • ½ cup granulated sugar
  • 3 tablespoons unsalted butter
  • ¼ cup heavy cream
  • Pinch of salt
  • Extra fresh berries (for garnish)
  • Mint leaves (for garnish)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the Croissant Base: Slice croissants in half and brush lightly with melted butter. Arrange in layers inside a springform pan or cake ring, pressing gently to create an even “mosaic” of buttery pastry layers.
  2. Make the Cream Filling: Beat heavy cream to soft peaks. In a separate bowl, whisk mascarpone, powdered sugar, vanilla, and honey until smooth. Fold whipped cream into mascarpone mixture until fluffy and well combined.
  3. Layer the Cake: Spread a layer of cream filling over the croissant base. Add a mix of sliced strawberries, blueberries, raspberries, and orange segments. Add another layer of croissants, then more cream and fruit. Repeat until all ingredients are used, finishing with a top layer of croissants.
  4. Make the Caramel Glaze: In a saucepan, melt sugar over medium heat until golden brown. Stir in butter until melted, then carefully whisk in cream. Add a pinch of salt and stir until smooth. Let cool slightly.
  5. Garnish & Serve: Decorate with fresh berries and mint leaves. Dust with powdered sugar. Slice and serve chilled or slightly cooled for the best texture.
