- 6–8 large croissants (day-old works best), sliced in half lengthwise
- 2 tablespoons unsalted butter, melted
- 2 cups heavy cream, chilled
- 1 cup mascarpone cheese (or cream cheese, softened)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon honey (optional, for extra richness)
- 1 cup strawberries, sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 cup mandarin orange segments (fresh or canned, drained)
- ½ cup granulated sugar
- 3 tablespoons unsalted butter
- ¼ cup heavy cream
- Pinch of salt
- Extra fresh berries (for garnish)
- Mint leaves (for garnish)
- Powdered sugar (for dusting)
Instructions
- Prepare the Croissant Base: Slice croissants in half and brush lightly with melted butter. Arrange in layers inside a springform pan or cake ring, pressing gently to create an even “mosaic” of buttery pastry layers.
- Make the Cream Filling: Beat heavy cream to soft peaks. In a separate bowl, whisk mascarpone, powdered sugar, vanilla, and honey until smooth. Fold whipped cream into mascarpone mixture until fluffy and well combined.
- Layer the Cake: Spread a layer of cream filling over the croissant base. Add a mix of sliced strawberries, blueberries, raspberries, and orange segments. Add another layer of croissants, then more cream and fruit. Repeat until all ingredients are used, finishing with a top layer of croissants.
- Make the Caramel Glaze: In a saucepan, melt sugar over medium heat until golden brown. Stir in butter until melted, then carefully whisk in cream. Add a pinch of salt and stir until smooth. Let cool slightly.
- Garnish & Serve: Decorate with fresh berries and mint leaves. Dust with powdered sugar. Slice and serve chilled or slightly cooled for the best texture.
