Delicious Double Berry Mascarpone Crumble Bars with a buttery crust, creamy mascarpone layer, and a fruity berry filling.

- 250 g (2 cups) all-purpose flour
- 100 g (1 cup) rolled oats
- 150 g (¾ cup) brown sugar, packed
- ½ tsp baking powder
- ¼ tsp salt
- 170 g (¾ cup) unsalted butter, melted
- 300 g (2 cups) mixed berries (blueberries + raspberries, fresh or frozen)
- 100 g (½ cup) granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 225 g (8 oz) mascarpone cheese, softened
- 225 g (8 oz) cream cheese, softened
- 100 g (½ cup) granulated sugar
- 1 tsp vanilla extract
- 1 large egg
Instructions
- Preheat oven to 175°C (350°F). Line a 23×23 cm (9×9 in) pan with parchment.
- In a bowl, mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
- Press ⅔ of the mixture firmly into the pan for the crust. Reserve the rest for topping.
- In a saucepan, combine berries, sugar, lemon juice, and cornstarch.
- Cook over medium heat until berries release juices and the mixture thickens (5–7 minutes). Let cool slightly.
- Beat mascarpone, cream cheese, sugar, and vanilla until smooth.
- Add egg and beat until just combined.
- Spread mascarpone mixture over the crust.
- Spoon berry mixture evenly on top.
- Sprinkle remaining crumble mixture over the berries.
- Bake for 35–40 minutes, until golden brown on top.
- Let cool completely, then refrigerate 2–3 hours before slicing for clean layers.
Notes
- For best results, use fresh berries when in season.
- Can be stored in the refrigerator for up to 5 days.
- For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
