Description

Delicious Double Berry Mascarpone Crumble Bars with a buttery crust, creamy mascarpone layer, and a fruity berry filling.

Ingredients

Scale
  • 250 g (2 cups) all-purpose flour
  • 100 g (1 cup) rolled oats
  • 150 g (¾ cup) brown sugar, packed
  • ½ tsp baking powder
  • ¼ tsp salt
  • 170 g (¾ cup) unsalted butter, melted
  • 300 g (2 cups) mixed berries (blueberries + raspberries, fresh or frozen)
  • 100 g (½ cup) granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 225 g (8 oz) mascarpone cheese, softened
  • 225 g (8 oz) cream cheese, softened
  • 100 g (½ cup) granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat oven to 175°C (350°F). Line a 23×23 cm (9×9 in) pan with parchment.
  2. In a bowl, mix flour, oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
  3. Press ⅔ of the mixture firmly into the pan for the crust. Reserve the rest for topping.
  4. In a saucepan, combine berries, sugar, lemon juice, and cornstarch.
  5. Cook over medium heat until berries release juices and the mixture thickens (5–7 minutes). Let cool slightly.
  6. Beat mascarpone, cream cheese, sugar, and vanilla until smooth.
  7. Add egg and beat until just combined.
  8. Spread mascarpone mixture over the crust.
  9. Spoon berry mixture evenly on top.
  10. Sprinkle remaining crumble mixture over the berries.
  11. Bake for 35–40 minutes, until golden brown on top.
  12. Let cool completely, then refrigerate 2–3 hours before slicing for clean layers.

Notes

  • For best results, use fresh berries when in season.
  • Can be stored in the refrigerator for up to 5 days.
  • For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
