Ingredients

- 2 cups graham cracker crumbs (or digestive biscuits, finely crushed)
- 1 ½ cups shredded coconut (plus extra for rolling if desired)
- 1 can (14 oz / 400 g) sweetened condensed milk
- ½ cup mini chocolate chips (plus extra for topping, optional)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- In a large bowl, combine graham cracker crumbs, shredded coconut, and a pinch of salt.
- Stir in sweetened condensed milk and vanilla until sticky and well blended.
- Fold in chocolate chips.
- Scoop about 1 tablespoon of mixture and roll into a ball.
- Optional: Roll in extra coconut for a snowy coating.
- Place on a parchment-lined tray.
- Refrigerate for at least 30 minutes to firm up.
- Serve as is or top with extra chocolate chips for fun.
