Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 3 large eggs (room temp)
  • 1 tsp vanilla extract
  • ½ cup milk (room temp)
  • 1 ½ cups fresh strawberries (sliced)
  • ½ cup strawberry jam (optional, for extra flavor)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Powdered sugar (for dusting)
  • Extra whole strawberries (for garnish)

Instructions

  1. Preheat oven: Heat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Mix dry ingredients: In a bowl, whisk flour, baking powder, and salt.
  3. Cream butter & sugar: In a large mixing bowl, beat butter and sugar until fluffy (2–3 minutes). Add eggs one at a time, then vanilla.
  4. Add milk & flour: Alternate adding flour mixture and milk, beginning and ending with flour. Mix just until combined.
  5. Bake: Divide batter evenly into pans. Bake 25–30 minutes or until a toothpick comes out clean. Cool cakes completely.
  6. Prepare whipped cream: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Assemble: Place one cake layer on a plate. Spread a thin layer of strawberry jam (if using). Add a layer of whipped cream and sliced strawberries.
  8. Place second cake layer on top. Dust with powdered sugar. Garnish with more whipped cream swirls and whole/sliced strawberries.
