A delightful homemade Fresh Strawberry Cake that combines the sweetness of fresh strawberries with a light and fluffy cake, perfect for any occasion.

- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 3 large eggs (room temp)
- 1 tsp vanilla extract
- ½ cup milk (room temp)
- 1 ½ cups fresh strawberries (sliced)
- ½ cup strawberry jam (optional, for extra flavor)
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
- Powdered sugar (for dusting)
- Extra whole strawberries (for garnish)
Instructions
- Preheat oven: Heat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- Mix dry ingredients: In a bowl, whisk flour, baking powder, and salt.
- Cream butter & sugar: In a large mixing bowl, beat butter and sugar until fluffy (2–3 minutes). Add eggs one at a time, then vanilla.
- Add milk & flour: Alternate adding flour mixture and milk, beginning and ending with flour. Mix just until combined.
- Bake: Divide batter evenly into pans. Bake 25–30 minutes or until a toothpick comes out clean. Cool cakes completely.
- Prepare whipped cream: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Assemble: Place one cake layer on a plate. Spread a thin layer of strawberry jam (if using). Add a layer of whipped cream and sliced strawberries.
- Place second cake layer on top. Dust with powdered sugar. Garnish with more whipped cream swirls and whole/sliced strawberries.
Notes
- Ensure all ingredients are at room temperature for best results.
- For a richer flavor, use homemade strawberry jam.
- This cake can be stored in the refrigerator for up to 3 days.
