Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup buttermilk (or milk with 1 tsp vinegar)
  • 1/2 cup rainbow sprinkles (jimmies, not nonpareils)
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 5 cups powdered sugar
  • 1/4 cup heavy cream (plus more if needed)
  • 2 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra rainbow sprinkles (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until fluffy.
  4. Beat in eggs one at a time, then vanilla.
  5. Alternate adding dry ingredients and buttermilk, mixing until smooth.
  6. Fold in rainbow sprinkles gently.
  7. Divide batter into prepared pans. Bake 22–26 minutes, or until a toothpick comes out clean. Cool completely.
  8. Beat butter until creamy for the frosting.
  9. Gradually add powdered sugar, beating on low.
  10. Add cream, vanilla, and salt, beating until fluffy and spreadable.
  11. Place one cake layer on a serving plate. Spread frosting evenly.
  12. Repeat with second and third layers.
  13. Frost the outside of the cake with a smooth coat.
  14. Press rainbow sprinkles onto the sides of the cake.
  15. Pipe frosting swirls on top and scatter more sprinkles.

Notes

  • Use jimmies instead of nonpareils for the cake to avoid bleeding of colors.
  • Ensure the cake is completely cool before frosting to prevent melting.
  • For a richer flavor, let the buttercream sit for a few hours before using.
