A delicious and easy recipe for Garlic Butter Steak Bites & Potatoes, perfect for a hearty meal.

- 1 ½ lbs sirloin steak (cut into 1-inch cubes)
- 1 ½ lbs baby potatoes (halved or quartered)
- 4 tbsp olive oil (divided)
- 4 tbsp unsalted butter (divided)
- 5 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp dried thyme (or fresh)
- 1 tsp dried rosemary (or fresh)
- Salt & freshly cracked black pepper, to taste
- Flaky sea salt (optional, for finishing)
Instructions
- In a skillet, heat 2 tbsp olive oil over medium-high heat.
- Add potatoes, season with salt, pepper, thyme, and rosemary. Cook 12–15 minutes, stirring occasionally, until golden brown and fork-tender. Remove from skillet and keep warm.
- Pat steak cubes dry with paper towels. Season generously with salt and pepper. Heat remaining 2 tbsp olive oil in the skillet over high heat. Add steak in a single layer (do not overcrowd). Sear 2 minutes per side until browned. Remove steak and set aside.
- Reduce heat to medium. Add 4 tbsp butter to skillet. Stir in minced garlic and cook 30 seconds until fragrant. Return steak and potatoes to skillet, tossing in the garlic butter. Cook 1–2 minutes until everything is coated and sizzling.
- Sprinkle with chopped parsley and flaky sea salt. Serve hot straight from the skillet or in bowls.
Notes
- Ensure not to overcrowd the skillet when searing the steak for even cooking.
- Adjust seasoning according to personal taste.
- For a spicier kick, add red pepper flakes to the garlic butter sauce.
